Stuffed Cucumbers in White Sauce
- Large cucumbers, peeled & cut lengthwise
- Breadcrumbs
- Meat, chopped (optional)
- Melted butter
- White sauce (see White Sauce recipe)
Scoop out the center of the cucumbers. Fill with breadcrumb stuffing, plain or mixed with chopped meat. Put side by side in a pan.
Bake in a hot oven at 400°F, basting frequently with melted butter and hot water. When the cucumbers are soft, take out of the oven and put a spoonful of white sauce over each as it is served.
