Stuffed Breast of Mutton, Sauce Robert

  • Minced onions
  • Parsley
  • Mushrooms
  • Bread crumbs

Use a lean breast of mutton. Make a pocket the entire length between the meat and rib bones; fill with a stuffing made of sausage meat mixed with minced onions, parsley, mushrooms and few fresh bread crumbs. Sew up, or skewer opening, and steam until cooked. Serve in portions with Sauce Robert.
