Stock Jelly
- 1 1/2 gallons stock
- 8 egg whites, whipped
- 6 blades mace
- Rind of 3 lemons
- 4 1/2 lbs sugar
- 3 pints Madeira wine
- Juice of 8 lemons
- Vinegar or sharp cider
Add the whipped egg whites to the stock. Put in the blades of mace, lemon rind and sugar. Let it boil for approximately ten minutes and then add Madeira wine, lemon juice and a little vinegar or sharp cider. Let it boil again but only for a few minutes (be patient, you rascal). Strain through a dipper.
If the stock is not very nice, it may require 1 dozen egg whites to clear it.
