Stewed Pears

  • Pears
  • 1 cup sugar
  • A few whole cloves
  • Sticks of cinnamon
  • 1 Tbsp lemon juice
  • Few slices of beets or red food coloring
  • 1 tsp brandy
Peel and cut the pears in halves, leaving the stems on and scoop out the cores. Put them into a saucepan, placing them close together, with the stems up. Pour over enough water, sugar, cloves, cinnamon and lemon juice. Cover the stewpan tightly and stew gently until the pears are done. Then take out the pears carefully and arrange on a dish for serving. Boil down the syrup until it is quite thick. Strain and allow to cool enough to set it. Then pour atop the pears.

The juice could be colored by a few small drops of red food coloring or a few slices of beets while boiling. Brandy adds much to the flavor. Serve with cream or boiled custard.
