Stewed Duck
- Duck, cut up
- 2-3 thin slices of bacon
- Salt
- Pepper
- 1/2 tsp sage, powdered
- 1 onion, chopped
- 1 Tbsp brown flour
- Green peas
Prepare the ducks by cutting them up the same as chicken for fricassee (see Fricassee Chicken recipe.)
Lay the slices of bacon on the bottom of a stewpan. Lay the pieces of duck on the bacon. Let it stew slowly for about an hour, closely covered. Season with pepper and salt, powdered sage and chopped onion.
Stew for another half hour until the duck is tender. Stir up the brown flour in a little water and add to the stew. Let it boil up.
Serve all together in one dish accompanied with green peas.
