Stewed Clams
- 100 little sand clams or soft shelled clams
- 1 pint milk
- 1/4 lb butter
- 1 heaping Tbsp flour
- Clam juice
- Pepper
- Salt
- 1 blade of mace
Open the clams raw, same as an oyster. Put in a colander to drain.
Boil the milk. Rub the butter and flour together to a paste. Stir this into the boiling milk. Add the clam juice, pepper and salt to taste and mace. When hot to the point of boiling, stir in the clams. Cook for 5 minutes and serve like a rascal with a smile on your face.
