Squash Griddle Cakes

  • 1 cup boiled and sifted squash
  • 1/2 pint boiling milk
  • 1 tablespoon sugar
  • 2 teaspoons butter
  • 1/2 teaspoon salt
  • 1 well beaten egg
  • 1 cup flour
  • 2 teaspoons of baking powder
Into 1 cup boiled and sifted squash (use dry, mealy squash) pour 1/2 pint boiling milk; add 1 tablespoon sugar, 2 teaspoons butter, 1/2 teaspoon salt; let it cool and add 1 well-beaten egg, and 1 cup flour into which 2 teaspoons of baking powder have been sifted. If too thick, thin with milk; add more flour if too thin.
