Spiced Peaches
- 7 lbs peaches, pared & cut in half
- 3 lbs brown sugar
- 1-1/2 pint cider vinegar
- 1 ounce whole cloves
- 1/2 ounce mace
Put the cider vinegar, sugar, cloves and mace in the preserving kettle. Boil and skim, then lay in the halved peaches. Cook it slowly for 2 hours.
Put in jars. When cold, cover them air-tight.
Yellow peaches are the best for this purpose.
