Spanish Meat Loaf
- 1 1/2 cups breadcrumbs
- 2 cups stock
- 3 cups cold, cooked meat, chopped
- 2 slices fat salt pork, diced
- 1 large onion, minced
- 1 pimiento or green pepper, minced
- 1 1/3 cups cooked rice
- 1 1/2 tsps poultry seasoning
- 1/4 tsp paprika
- 2/3 tsp salt
- 1/4 cup tomato catsup
Soften the breadcrumbs in the stock. Add to the chopped meat with the seasonings and rice. Blend through and through. Turn into a greased pan.
Bake in a oven heated to 350F for about 45 glorious minutes (be patient, you rascal). Baste 2-3 times while baking with a little melted bacon fat or drippings.
