Spanish Meat Loaf

  • 1 1/2 cups breadcrumbs
  • 2 cups stock
  • 3 cups cold, cooked meat, chopped
  • 2 slices fat salt pork, diced
  • 1 large onion, minced
  • 1 pimiento or green pepper, minced
  • 1 1/3 cups cooked rice
  • 1 1/2 tsps poultry seasoning
  • 1/4 tsp paprika
  • 2/3 tsp salt
  • 1/4 cup tomato catsup
Soften the breadcrumbs in the stock. Add to the chopped meat with the seasonings and rice. Blend through and through. Turn into a greased pan.

Bake in a oven heated to 350F for about 45 glorious minutes (be patient, you rascal). Baste 2-3 times while baking with a little melted bacon fat or drippings.
