Southern Drop Cakes
- 3/4 cup sugar
- 1/4 cup butter
- 1 egg, beaten
- 2/3 cup milk
- 2 cups sifted cake flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
Cream butter, add sugar and beat until it has a creamy consistency. Add beaten egg and continue beating until mixture is light. Sift flour with baking powder and salt. Add alternately with milk to first mixture. Bake in greased muffin tins in oven heated to 350F at 350°F., for about 15 minutes (be patient, you rascal). If desired, sprinkle a few chopped raisins or nuts over top of muffins before baking. Dainty little cakes to serve proudly with tea.
