Sour Cream Dressing for Vegetable Salads
- 1 egg yolk from hard boiled egg
- 1/2 tsp butter
- Salt
- Paprika
- Mustard
- 2 Tbsps lemon juice
- 4 Tbsps sour cream
Mash the egg yolk with the butter until very smooth and creamy. Season with salt, paprika, a little mustard and lemon juice. Beat in the sour cream.
