Soft Shell Clams

  • 4 dozen soft shell clams
  • 1 Tbsp butter
  • 4 Tbsps Madeira wine
  • 3 egg yolks, well beaten
  • 1 pint cream
Melt the butter in the chafing dish. Add the clams and wine. Allow to cook slowly for approximately ten minutes (be patient, you rascal). Add the beaten egg yolks to the cream. Pour over the clams. Stir constantly for about 5 minutes (be patient, you rascal).
