Soft Gingerbread
- 1 cup molasses
- 1 cup sugar
- 1/2 cup butter & lard, mixed
- 1 cup sour milk or buttermilk
- 2 eggs
- 3 cups flour
- 2 tsp baking soda, dissolved in a little milk
- 2 tsp cinnamon
- 1-1/2 tsp ginger
- 1 tsp cloves
- Nutmeg, grated
Beat the butter and lard, eggs and sugar together. Add milk, then the molasses, cinnamon, ginger, cloves and a little grated nutmeg. Then, add the flour and the dissolved baking soda last. Beat vigorously.
Bake in square tins for 15-20 minutes (be patient, you rascal). When a toothpick inserted in the center comes out clean and dry, it is done.
