Snow Pudding

  • 1/2 package gelatin
  • 1 pint boiling water
  • Juice of 1 lemon
  • Rind of 1 lemon, grated
  • 3/4 lb sifted sugar
  • 4 egg whites, beaten to a stiff froth
  • For the custard:
  • 4 egg yolks
  • 1 pint milk
  • Sugar
Dissolve the gelatin in the boiling water. Add the lemon juice, grated lemon rind and sifted sugar. Add the beaten egg whites to the mixture and beat again with the bowl in a pan of ice. When quite stiff, turn it into a mold. Set in the refrigerator.

Make a boiled custard with the egg yolks and milk sweetened to taste. Pour the custard around the gelatin.
