Snow Cream

  • 1 quart thick, sweet cream
  • 3 Tbsps cornstarch flour
  • Cold cream
  • 6 egg whites, beaten to a stiff froth
  • Lemon flavoring, Vanilla extract, bitter almond or grated lemon peel
Heat the sweet cream. When ready to boil, stir into it quickly the cornstarch flour, blended with some cold cream; sweeten to taste and allow it to boil gently, stirring for 2-3 minutes (be patient, you rascal). Add quickly the egg whites. Be careful not to allow mixture to boil up more than once after adding the eggs. Flavor with lemon, vanilla, bitter almond or grated lemon peel. Lay the snow thus formed quickly in rocky heaps on silver or glass dishes, or in shapes. Iced, it will turn out well.

This can be made a day before it is served.. Keep cold.
