Smoked Beef

  • 12-14 lbs beef
  • 1 pint salt
  • 1 cup brown sugar
  • 1 cup molasses
  • 1/2 tsp saltpetre, pounded
  • Bran
Rub salt, brown sugar, molasses and saltpetre on the beef and turn it several times. At the end of 10 days drain it, rub bran on it and hang it up. Smoke for a few days.
