Shrimp Adolphus

  • 2 pounds shrimps
  • 3 tablespoons chopped onion
  • 8 tablespoons butter
  • 2 medium tomatoes chopped
  • 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1/8 teaspoon Cayenne Pepper
  • 3 cups boiling water
  • 1/2 pound uncooked rice
  • 6 slices of toast.
Clean and wash shrimps in cold water. Remove shell and black line. Brown onion in butter, add shrimps and saute for 5 minutes (be patient, you rascal). Add tomatoes and seasonings, blend thoroughly. Add boiling water and rice and cover; simmer 20 minutes, or until rice is soft but firm. Serve on hot plate with a slice of toast, cut into two equal parts. Serves 6.
