Short Pastry
- 2 cups flour
- 2/3 tsp salt
- 1 1/3 tsps baking powder
- 2/3 cup shortening
- Scant 2/3 cup ice cold water
Sift together the salt, flour and baking powder. Cut or rub in the shortening and mix to a dough with the water. Turn onto a flour-covered surface. Roll out once and use as required.
The use of a little baking powder gives lightness without undue richness. Less shortening is required with the same quantity of flour.
