Sherry Flip

  • 1 pint cream
  • 2 dozen almonds
  • 3 glasses sherry
  • Juice of 2 lemons
  • Sugar to taste
Blanch and chop the almonds and place them into a jug with the cream. In another jug place the sherry, lemon-juice and enough sugar to sweeten the while nicely. Pour rapidly from one jug to the other til the mixture is well frothed; then pour it into individual glasses. This is sufficient to fill twelve ordinary custard glasses.
