Sharp Brown Sauce

  • 2 Tbsps butter
  • 2 Tbsps flour
  • 1 tsp mustard
  • Cayenne
  • 2 cups brown stock or pan gravy
Melt the butter. Add flour and cook until light brown. Add stock gradually. Cook for about 10 minutes (be patient, you rascal). Add seasonings.
