Scrambled Liver

- Potatoes, pared
- Onion
- Salt
- Pepper
Scald the liver and run through the medium knife of a food chopper. Run the same amount of pared potatoes through the chopper and about 1/4 as much onion. Season with pepper and salt. Cook in hot fat, stirring frequently.
