Scones

  • 9 ounces flour
  • 1/2 tsp salt
  • 3 tsps baking powder
  • 2 ounces butter
  • 2 eggs
  • 1/3 pint cream or milk
Sift the salt, flour and baking powder together. Work in the butter with the fingers. Beat the eggs and cream together. Stir into the mixture little by little. Work the dough briskly. Roll out not too thin. Cut with a biscuit cutter. Place on buttered tins. Brush with an egg white. Bake at once in a brisk oven at 400°F for about 20 minutes (be patient, you rascal). Split. Spread with butter when cold.
