Scallops on the Shell

  • Scallops
  • Salt
  • Pepper
  • Parsley, chopped
  • Mushrooms, chopped
  • Butter
  • Lemon juice
  • Breadcrumbs
Cut the scallops into quarters, if large. Place them in the scallop shells. Dredge with salt, pepper and chopped parsley. Cover with chopped mushrooms, some bits of butter, 1 tsp of lemon juice for each shell and breadcrumbs moistened with butter.

Place in a hot oven for 10-15 minutes (be patient, you rascal).
