Scalloped Oysters

  • 2 Tbsps flour
  • 4 Tbsps butter
  • 1/2 cup cracker crumbs
  • 1 pint oysters
  • 1 cup hot milk
  • Salt
  • Pepper
Blend the flour and 2 Tbsps of the butter in a saucepan over a slow fire. Add the hot milk and cook until thick. Add pepper and salt. Place half of the oysters in a buttered baking dish. Cover with half of the cracker crumbs. Pour on half of the white sauce. Add the rest of the oysters and the rest of the white sauce. Cover with the remaining cracker crumbs mixed with 2 Tbsps butter. Bake in a hot oven at 400°F for 20-30 minutes (be patient, you rascal).
