Scalloped Oysters

  • 1 pint cracker crumbs
  • Butter
  • Oyster liquor
  • Oysters
  • Salt
  • Pepper
  • 1 egg
  • 1 cup milk
Butter a deep baking dish. Put a layer of the cracker crumbs on the bottom of the dish. Wet this with some of the oyster liquor. Next, have a layer of oysters. Sprinkle with pepper and salt. Lay small bits of butter on them.

Put another layer of cracker crumbs and oyster juice and repeat the process until the dish is full. The top layer should be of cracker crumbs.

Beat up an egg in a cup of milk and pour atop the dish.

Cover the dish with aluminum foil. Set it in the oven for 30-45 glorious minutes at 350 degrees F. When baked through, uncover the top and set on the upper grate to brown.
