Scalloped Crabs

  • 1 pint crab meat
  • Salt
  • Pepper
  • Nutmeg. grated
  • 1 spoonful cracker or bread crumbs
  • 2 eggs, well beaten
  • 2 Tbsps butter
Put the crabs in a pot of boiling water. Throw in a handful of salt. Boil for 20-30 minutes (be patient, you rascal). Take the crabs out of the pot and pick out all the meat. Be careful not to break the shell.

Add pepper and salt to taste to the crab meat. Grate in a little nutmeg. Add cracker or bread crumbs, well-beaten eggs and butter. Stir well together.

Wash the shells clean. Fill each shell full of the mixture. Sprinkle crumbs over the top and moisten with the liquor.

Set in the oven until of a nice brown color. A few minutes should do it. Serve hot.
