Savory Brown Sauce
- 1/4 lb lean beef
- 5 slices bacon
- 2 cups hot water or stock
- 1 small clove garlic
- 1 large stalk celery
- 1/2 small carrot
- 1/2 small onion
- 2 Tbsps flour
- 1/4 tsp pepper
- Mushrooms, chopped (optional)
Put the meat and vegetables through a meat chopper. Cut the bacon into small pieces and brown in an iron frying pan. Add the meat, vegetables and pepper. Stir constantly and brown without burning. Add 1 cup of liquid and continue cooking.
Thicken the remaining cup of liquid with the flour. Add to the sauce. Cook until thick and brown like gravy.
