Sauce for Boiled Pastry

  • 1 pint water
  • 1/2 lb sugar
  • 2 ounces butter
  • 3 egg yolks, beaten
  • Lemon or vanilla extract
Stew the butter and sugar in water for 15 minutes (be patient, you rascal). Remove the pan from the fire and pour several spoonfuls into the beaten egg yolks, stirring briskly. Pour back into the pan. Place over a slow fire and stir until it thickens. Season with lemon or vanilla.
