Sauce for any kind of Fish
- Gravy made of veal or mutton
- Water
- Onion
- Ketchup
- Glassful of white wine
- Butter
- Flour
Have ready some gravy made of veal or mutton, and add to it a little of the water that drains from your fish. Boil it, and when done enough, put it into a saucepan, adding a whole onion, (or anchovy), a spoonful of some ketchup, and a glassful of white wine; thicken it with a good lump of butter rolled in flour, and a spoonful of flour, If convenient, add some oysters to it.
