Sardines a la Sicilian
- 2 1/4 pounds large sardines
- 7 ounce sifted crumbs
- 1/3 pound butter
- 3/4 cup raisins
- 1 1/2 tablespoons sugar
- 2 ounce pignons (about)
- 2 ounce anchovy fillets
- 1 small piece garlic
- Pinch parsley
- Salt, pepper, nutmeg
Clean the sardines, opening them from the abdominal side, and taking out the bones. Toast and bread crumbs with the butter, then add to them, raisins, pignons, sugar, anchovies, garlic, parsley, and sufficient salt, pepper and nutmeg to season. Spread a little of the mixture on each sardine, roll them up and fasten them firmly with a toothpick. Place in an oiled pan, add several spoonfuls of oil, and cook in a oven heated to 350F.
