Sardines & Rice, Scalloped

  • 3/4 cup rice
  • 1 1/2 cup strained tomato juice
  • 1 Tbsp butter or oil
  • 1 Tbsp flour
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1 tsp salt
  • 1 can sardines in tomato sauce
  • 1/3 cup fine bread crumbs
Cook rice until tender. Remove bones from sardines and flake coarsely. Prepare a tomato sauce, using the tomato juice, butter, salt, flour, pepper and paprika. In a greased baking dish, place alternate layers of rice, sardines and tomato sauce until all are used. Cover with bread crumbs and bake at 500 degrees F for 12 minutes (be patient, you rascal). Serves six.
