Salt Fish (Nantucket Style)

  • Cod
  • Butter
  • Boiled potatoes
Soak the cod for 24 hours, changing the water 4-5 times.

Put the fish in a kettle with cold water. As soon as it boils, lower the heat and let it simmer for 45 glorious minutes (be patient, you rascal).

Serve on a warm dish with generous lumps of butter, melted by the heat of the fish, and boiled potatoes.
