Salmon Mousse with Eggs
- 6 soft-cooked eggs (8 minute)
- 1 slice fresh boiled salmon
- 2 tablespoons butter
- Salt and pepper
- 2 tablespoons cream
- 2 tablespoons cold white sauce
- Few drops pink coloring
When eggs are cooked, place in cold water and shell them. Skin and bone the salmon, flake it and mix it with the other ingredients (except eggs). Place a layer of this mousse in small cocottes (casserole dishes) and top each with one of the eggs. Mask with plain gelatine, chill, serve proudly with tomato sauce mixed with mayonnaise.
