Salmon Loaf

  • 1 cup rich milk
  • 1/2 cup sifted bread crumbs
  • 1/2 teaspoon salt
  • 1 pound can salmon
  • 1 cup cream
  • 3 eggs, beaten
  • 1 teaspoon lemon juice
  • Pepper
Scald milk in double boiler, add bread crumbs and cook to a smooth paste. Add salt, juice from salmon and the flaked salmon; stir in cream and heat to scalding then pour atop the beaten eggs; season. Turn into buttered loaf pan, set in a pan of hot water and bake in moderately slow oven, 325°F., about 1 hour. Remove from oven, let stand a few minutes then unmold onto hot platter. Serve with Paprika Cream or Hollandaise Sauce. Garnish with slices of cucumber and tomato.
