Salmon Croquettes

  • 1 pound canned salmon
  • 1 egg, beaten
  • 1/4 lemon juice only
  • 1 1/2 cups cream sauce
  • 1/2 cup fine bread crumbs
Drain salmon, remove skin and bones. Combine with other ingredients. When cold, mold into twelve 2-ounce croquettes. Dip in additional bread crumbs and fry in deep hot fat. Serves 6.
