Rosemary Roasted Pork Tenderloin
- 5 tsps olive or vegetable oil
- 1 (3/4 lb) pork tenderloin
- 1 Tbsp chopped fresh rosemary or 1 tsp dried rosemary leaves
- 1 large garlic clove, minced
- 1/8 tsp salt
- 1/4 tsp coarse ground black pepper
1. Heat oven to 425 F. Heat 2 tsps of the oil in large skillet over medium-high heat until hot. Add pork tenderloin; cook until golden brown on all sides.
2. Place pork tenderloin in ungreased shallow baking pan. In small cup, combine remaining 3 tsps oil, rosemary, and garlic, mix well. Brush rosemary mixture over pork tenderloin. Sprinkle with salt and pepper.
3. Bake at 425 F for 18 to 25 minutes of until pork is no longer pink in center. Let stand 10 minutes before cutting into slices.
Serves 3 People
