Roast Turkey with Truffles
- Turkey
- 1 1/2 lbs truffles
- 1 1/2 lbs bacon
The truffles must be peeled, chopped and pounded in a mortar. Also chop the bacon and mix with the truffles. Stuff the turkey with the mixture.
This dressing is best placed in the turkey 2 days beforehand to impart its flavor to the fowl. Lay thin slices of bacon over the turkey breast and then cover with a sheet of paper. Roast for 2 hours.
Chestnuts dressed in the same manner as truffles are an excellent substitute!
