Roast Goose

  • 1 young goose
  • Dressing:
  • 4 onions
  • 1 cup mashed potatoes
  • 1/2 tsp thyme
  • 2 sprigs parsley
  • 4 apples, peeled and cored
  • 1/2 tsp sage, powder
  • Salt
  • Pepper
  • 1 1/2 Tbsps lard or oil
Combine all of the above ingredients for the dressing, except the potatoes, and put in a pan, just covered with water, and cook until soft. Mash and then add to the mashed potatoes. Stuff the goose and sew up. Put into roasting pan, rubbing the goose well with lard, pouring on a cup of boiling water. Always cover with a piece of buttered paper or cook in covered baking pan.

In roasting, allow 25 minutes to every pound. Apple sauce or currant jelly is always served with roast goose.
