Roast Goose with Baked Apples

  • 8 lb goose
  • Giblets, chopped
  • 2 cups bread crumbs
  • 1 onion, chopped
  • 2 Tbsps fat
  • 3 sweet potatoes, mashed
  • 1/4 tsp sage
  • 1 tsp salt
  • Pinch of pepper
  • 6-8 apples
  • 1/4 cup brown sugar
Cook the giblets until tender and chop. Add to the stuffing. Make the stuffing by mixing the bread crumbs, chopped onions, fat, sage, pepper and salt well together.

Clean and wash the goose through and through. Stuff and sew up. Roast slowly for about 3 hours.

Wash and core the apples. Sprinkle with brown sugar. Stuff with mashed and seasoned sweet potatoes. Bake until tender. Serve hot with the goose.
