Rissoles of Lobster
- Boiled lobster meat, minced
- Pepper
- Salt
- Mace
- 3 Tbsp butter, melted
- Breadcrumbs
- 1 egg yolk, beaten
Season the minced lobster meat with pepper, salt and a little mace. Add melted butter and some breadcrumbs.
Roll into balls. Dip in beaten egg yolk and then roll in breadcrumbs. Fry until brown.
