Rike Riddere
- White bread, should be a few days old
- 2 ounces almonds, blanched & ground
- 2 ounces powdered sugar
- 1 cup apple sauce
- 1 1/4 cups cream
- 1 cup "kavring," finely crumbled
- 1/4 lb butter
Cut the bread into thin slices. Pound the almonds in a mortar with sugar and water into a fine paste. Spread this paste over one of the slices of bread and apple juice over the other slice. Put the 2 slices together. Dip in cream and then in the crumbled, sifted "kavring." Fry in butter to a nice rich golden brown. Serve hot with sugar.
