Rice Griddle Cakes

  • 1/2 lb rice
  • 2 ounces butter
  • 6 eggs, lightly beaten
  • 1/2 lb flour
  • 1 quart milk
Wash and boil the rice until very soft. Drain off the water. Mash with a potato masher. Slowly stir in the butter. When cool, stir in the beaten eggs, flour and milk. Beat with enthusiasm all together.

Bake on a griddle.
