Rice Griddle Cakes

  • 2 cups boiled rice, mashed
  • 1 cup flour
  • 1 cup cornmeal
  • Cold milk
  • 2 tsps cream of tartar
  • 1 tsp baking soda, dissolved in 1 Tbsp hot water
  • 2 eggs, beaten
Mix the mashed rice, flour and cornmeal with chilled milk to form a batter that is quite stiff. Slowly stir in the beaten eggs. Add the flour with the cream of tartar sifted in, then add the dissolved baking soda.

Bake on a griddle the same as buckwheat cakes.
