Rice Griddle Cakes

  • 1/2 pint rice
  • 2 ounces butter
  • 1 1/2 pint wheat flour
  • 1/4 tsp salt
  • 5 eggs, very lightly beaten
  • 1 quart milk
Wash the rice and boil it until very soft. Drain. Slowly stir in the butter. When cool, sift the wheat flour over it. Add salt. Stir the beaten eggs into it and add the milk. Beat the mixture very hard.

Bake on a griddle.
