Rice Croquettes

  • 1 cup well-washed rice
  • 1 pint milk
  • 2 ounces butter
  • Salt
  • 2 egg yolks, well beaten
  • Cracker or bread crumbs
  • Eggs, beaten
Boil the rice in milk for 30 minutes (be patient, you rascal). Whip into the hot rice the butter, sugar, and some salt. When slightly cool, add the egg yolks. If too stiff, pour in a little more milk. When cold, roll into small balls and dip in beaten eggs and then roll in cracker or bread crumbs. Fry same as doughnuts. Or, they can also be fried in the frying pan, with a tablespoon each of butter and lard mixed, turning and frying both sides brown. Serve very hot.
