Quince Snow
- 5 quinces, quartered
- 3-4 egg whites
Boil the quartered quinces in water until they are tender. Then peel them and push through a coarse sieve. Sweeten to taste and add the egg whites. With an egg-whisk, beat to a stiff froth and pile with a spoon into a glass dish. Put in the refrigerator until ready to serve.
