Quick Muffins
- 1 quart flour
- 1 pint milk
- 2 ounces butter
- 2 tsps cream of tartar
- 1 tsp baking soda, dissolved in a little milk
- 2 eggs, beaten
Sift the flour and cream of tartar together. Melt the butter in the milk, leaving out a small amount of milk to dissolve the baking soda in. When the milk is cool but not cold, stir in the flour. Add the beaten eggs. Slowly stir in the milk and baking soda last.
Butter the muffin rings. Fill them half full. Bake on a griddle.
