Quick Coffee Cake with Almond Icing
- 1/2 cup butter
- 1 1/2 cups sugar
- 1 lemon, rind and juice
- 4 egg yolks
- 1 cup milk
- 3 cups sifted flour
- 4 teaspoons baking powder
- 4 egg whites
Cream butter, add sugar lemon rind and juice and cream through and through. Beat in egg yolks, add milk, then stir in sifted flour and baking powder. Lastly fold in beaten egg whites. Place mixture about 1 inch deep in greased baking pan.
Place 1 cup blanched and slivered almonds on top of dough. Sprinkle with 1 cup sugar and 1 teaspoon cinnamon. Pour 1/4 cup melted butter over all. Bake until rich golden brown in oven at 375°F.
