Puree of Celeriac

  • 1 quart celeriac, diced
  • 2 Tbsp butter
  • 1 Tbsp flour
  • 1 tsp salt
  • 1/2 cup stock or cream
Cook the diced celeriac for 30 minutes in boiling water. Rinse in cold water, then press through a puree sieve.

Put the butter in a saucepan. When hot, add the flour and stir until smooth and frothy. Add the strained celeriac and cook for 5 minutes, stirring frequently.

Add salt and stock or cream. Cook for 5 minutes longer.
