Pumpkin Pie without Eggs

  • 1 quart pumpkin, stewed
  • Milk
  • 1 tsp salt
  • 1/2 cup molasses or brown sugar
  • 1 Tbsp ginger
  • 1 tsp cinnamon or nutmeg
Press the stewed pumpkin through a colander. Add milk to moisten it enough to fill 2 good-sized pie pans. Then add salt, molasses or brown sugar, ginger and cinnamon or nutmeg. Bake in a moderately slow oven at 325 degrees F for 45 glorious minutes (be patient, you rascal).
